Holiday Leftover Egg Rolls

These are DELICIOUS!!!

I don’t even know how this became a tradition, but three Thanksgivings ago, we made Holiday Leftover Eggrolls. It sounds really weird, and yet they are delicious. You can make them and eat them immediately or make them ahead of time and freeze them for later. 

The only things you’ll need aside from leftovers is egg roll wrappers and vegetable oil. You can find them at pretty much any grocery store, and they’re inexpensive. 

Ingredients

  • Egg Roll Wrappers
  • Vegetable Oil
  • Turkey (or Ham)
  • Stuffing
  • Mashed Potatoes
  • Cranberry Sauce
  • Gravy

Instructions

  • In a saucepan, heat vegetable oil to the temperature discussed on the egg roll wrapper packaging. 
  • In another saucepan, heat gravy and water to make it liquid again.
  • In the middle of the wrapper layer mashed potatoes, cranberry sauce, stuffing, and turkey. 
  • Fold wrapper like instructed on the package. 
  • Once the oil is heated to the required temperature you can put the egg rolls in the oil. Cook for three minutes or until golden brown. Rotate when one side is golden. They will float. 
  • You can also wrap them in tin foil and freeze for a later date. They will take a little longer to fry, but you can fry them frozen. 
  • When done, place on a plate covered in paper towels. Let cool for one minute. 
  • Pour gravy into small bowl. 
  • Dip egg rolls in gravy and DEVOUR!!!

Happy Holiday Season and 11… 

I’m behind because the internet has sucked EVERYWHERE!!! I’ve also been disinclined to work. So here are 11… Holiday Outfits I Love. I wore them all this year. They’re cute and festive. 

1. Holly Jolly Pajamas
Okay… This Holly Jolly sweatshirt isn’t technically pajamas, but I love it! It looks so cute with the candy cane striped flannel shorts. Beau loves her jammies. And my socks kept me warm!

2. Green Turtleneck Sweater Dress & Red Flannel
I love comfy yet festive. I do live in my pajamas, so sweater dresses feel like an extension of that. This cute green turtleneck sweater dress is amazing. I love tying a red flannel shirt at my waist. Over the knee black boots keep my legs warm, and a chunky hat keeps me cute and cozy. A sparkly touch is a cute pear shaped sapphire necklace and earrings.

3. Vintage Burgundy Off-the-Shoulder Dress
I love this dress!!! It’s so cute and vintage. I’m always shocked when defined waist dresses actually fit me because I’m so tall. The green art deco earrings are gorgeous. Paired with silver heels and a rose gold watch, it’s perfectly simple yet classic and classy.

4. Casual Green on Green
I am super obsessed with casual jersey dresses, flannel shirts, over the knee boots, and chunky knit hats. Obviously I combined them into a Christmas picture!

5. Sparkly Candy Cane Dress
I LOVE THIS DRESS!!! Who doesn’t want a ridiculously sparkly candy cane dress for Christmas? Pair it with rose gold sparkle shoes to be extra disco bally. I love my new black glasses. A cute velvet bow and dangly earrings make it perfect.

6. Backless Velvet Bodysuit & Taffeta Skirt
This was one of my favorite Christmas outfits last year. The burgundy velvet bodysuit is backless with black trim and it’s amazingly Christmassy!!! I also love the green taffeta skirt. Nude heels let the outfit shine. Pair with a cute rose gold watch.

7. Cozy Statement Outfit
I love this outfit. It’s festive without being blaringly Christmas or New Year’s Evy. This purple satin skirt is so cute and comfy. I love pairing it with a chunky over sized sweater. Sparkly bootie heels are the perfect glam factor. My black glasses are nerd chic. An understated pink scarf and cute snowflake earrings tie it all together.

8. Classic White
This is probably my favorite outfit ever. This white and black skirt is perfect, and it’s amazing to twirl in. I paired it with a simple white turtleneck. To make it festive and pop, red high heels.

9. Vintage Green Dress
This is such a fun green, 50s style dress. It’s simple and comfortable. Paired with red high heels it’s very festive. Blue pear shaped earrings and necklace with a rose gold watch is elegant and cute.

10. Buffalo Plaid
Buffalo plaid flannel shirts are so wintery. I love tying it at the waist with a black jersey dress. Over the knee boots and my smart watch make it a casual look for the winter season, while still being comfy and warm.

11. Blue Tartan Wool Skirt
Wool skirts might be old fashioned, but they’re beautiful. I love this blue tartan wool skirt; it has pockets!!! A cute blue shirt, silver high heels, basic white earrings, and a silver watch make it wintery and festive without loud and obnoxious.

Happy Fourth of July from Beau and I to you!

For the non-Americans, the Fourth of July is when the United States celebrates its freedom, and it is also known as Independence Day. 

In 1776, the United States was actually a British colony. On July 2, 1776, we declared independence from the British Empire. Continental Congress approved the Declaration of Independence on July 4, 1776. It wasn’t until August 2, 1776 that the Declaration was signed in Philadelphia, Pennsylvania in Independence Hall. Today, Americans like to celebrate with a day off, food, fireworks, and time spent with family and friends. Fireworks are mandatory in my book.

This is my first Fourth in Texas. I’ve lived in Texas for two and a half years. The first year, I was on vacation in San Diego. Last year, I was in Chicago. This year, I am celebrating with friends and Beau. We’ll find out if Beau is scared of fireworks…

I have mixed feelings about the Fourth of July. Many Americans like to taut the U.S. as the best country in the world. I do love this country despite the human cesspool currently in office. There are lots of things to love, and a whole bunch of things leading to disappointment and anger. 

Like many countries, America’s history is fraught with racism, oppression, destruction, ignorance, slavery, and so much more. We are a great country with some truly wonderful people and things to offer the world, but there are some equally frightening aspects of who we are. 

Our present is precarious. We are stripping women of their autonomy and rights. We’re holding children and adults at borders in horrifying conditions so much so people are dying. We elected a terrible person to the highest office in this country. A rapist is sitting on the Supreme Court. Racism is rampant. Flint’s water is still dangerous. College is overpriced. People think vaccines are a scam. Insurance is not for everyone. Oh my God, the list goes on and on and on and on. My heart hurts, and anger is an understatement. 

I don’t understand how we could possibly be the greatest country in the world when there are so many people suffering and so many things are going wrong. We are a country full of potential to be great, but we’re not there yet.

Happy Fourth of July. Have fun! Celebrate. Enjoy the day. I will. But don’t let the fanfare make you forget all the things we have done wrong historically and presently.

Quick Review Set in Victorian London, this mild mystery is a sweet story about the meaning of Christmas spirit and never giving up.

Victorian London is an iconic Christmas setting perfect for any holiday mystery. Anne Perry sets A Christmas Revelation in the middle of not-so-respectable London. It’s a short novel perfect for a busy reader this holiday season.

Worm is a nine year old orphan wandering the streets of London, when he sees a beautiful young woman abducted. He lives at a medical clinic with Squeaky, a brothel owner turned bookkeeper, and an assortment of other characters. Worm goes home with the woman on his mind. He confides in Squeaky, who tries to distract him with the Christmas story. Squeaky is an old grump with no holiday spirit, but as he describes the traditions and history to Worm, who’s never had a true Christmas, he begins to melt a little. What ensues is a scramble for decorations and to find the woman because no matter how much Squeaky tries, Worm can’t forget about the woman he saw.

Perry does a very good job of showing the situations of the characters in A Christmas Revelation. In short books, it is easier to tell rather than show the reader. Perry does not succumb even in the earliest pages, “He walked quite quietly, since his boots were very thin…” She writes in the third person narrative, which allows the reader to see the thought process of both Squeaky and Worm. They are on opposite sides of the age spectrum of age, but they bond over a common goal. Perry does a decent job describing the thought process of Worm, but does a better job of getting in Squeaky’s mind. She easily narrates the ways an adult simplifies and side-steps complicated issues for children.

A Christmas Revelation is a sweet Christmas novel under 200 pages. It is small and easy to read. If you’re looking for something light with a super sweet ending, this is a good one. Anyone can easily finish it by Christmas. I read it in two hours.
